Banana Cream Pie with Chocolate Lining

This was amazing! I used amaretto instead of whiskey and added coconut to the whipped cream. My date for the evening was extremely impressed and insisted on taking a couple slices to work the next day. ;-)

Coconut Muffins

These were amazing, although I did make some changed.. I used 1 cup of fresh coconut in the muffins I also used coconut oil, and coconut milk instead of regular milk. The batter seemed a little thick (I may have just measured the flour wrong) so I added an extra egg and an extra bit of milk.. But with those modifications, these were the best muffins I've ever made!

Grilled Jerk Pork Tenderloin

I loved the taste of this marinade...and loved that i threw everything but the meat in the blender and then marinated overnight so it was sooo easy to just grill the meat. some might like this a bit hotter, so leave the seeds or add another habanera.
