If you think of “Prairie Home Companion,” Jell-O salad, and hot dish when you think of Minnesota cuisine, you’re way off the mark—at least in the Twin Cities. Minneapolis and St. Paul are part of a vibrant Midwest dining scene that’s second only to Chicago. Although the region was settled by Scandinavians drawn to the timber and flour mills, you’ll be hard-pressed to find Norwegian or Swedish restaurants these days now that Marcus Samuelsson’s Aquavit has closed. New immigrants, from Somalia, Laos, and Mexico have changed the local culinary landscape. Minneapolis is the younger, hipper sibling, with cutting-edge restaurants and architecture (check out the new Guthrie Theater overlooking the Mississippi). St. Paul, the state capitol, is the clean-cut traditionalist; famous Summit Avenue residents included F. Scott Fitzgerald and timber magnate Frederick Weyerhaeuser.

I'm allergic to gluten and soy, so I have been forced to learn how to cook nearly everything, since almost all our foods are prepared with these ingredients now. I'm a food activist - for organic, local, and sustainable foods. I also wish to remove genetically-modified foods from nearly everything we eat to protect the diversity of foods that will end up dying off if we keep breeding only 1 variety of each type of food. Remember Ireland's potato famine? There used to be 8000 varieties of potatoes, now there are 4. When disease strikes, we are going to be in big trouble.

Balsamic Glazed Carrots

Flavor was good, but I wish I would have listened to my instincts and boiled or steamed the carrots first. I'll do that next time, though. Yum!

Peanut Caramel Apple Crisp

Darn it... I was really rootin' for this recipe. Yup... Totally 'soupy' and greasy. Almost too sweet, even with Haralson apples. Stuck this in the freezer, to get it to "firm up" - but then it just got ugly... (All that butter coagulated and looked utterly disgusting) I did use OATS instead of PEANUTS not just out of preference - but I didn't have any peanuts.

No Crust Pumpkin Pie

Like other reviewers, I noticed a custard type taste/texture, but it was still good. The boyfriend loves pumpkin pie and he ate it up!
