About me:
Well I have been in the kitchen from the tender age of 4. Watching and helping my mother and grandmother cook. I made my first full meal at the age of 8. Just spaghetti & meatballs with my mother's recipe for homemade sauce, fresh homemade bread and a salad. A very basic meal but I was very proud and my family was impressed. Of course my mother was in the kitchen with me to supervise so I would not hurt myself but for the most part - I did all the work. As the years rolled on - my cooking skills have vastly improved. I can basically make almost anything and I love to try making new things.

Pineapple Chicken Delight

I decided to try this recipe based on my pal KOALAGIRL's recommendation, and I'm so glad I did!!!! I have to concur with her review. AWESOME! Yes, line your pan with foil, slice those 'taters as thin as you can and IMHO, double up on the amount of pineapple juice or all you're going to taste is chicken in BBQ sauce.I've made this twice in two weeks and the hubby and kids are still licking their lips. This "easy-pleasey" recipe's going into our rotation for sure. Thanks Joy!

Lemon Raspberry Pie

I used fresh whip cream instead of the cool whip. I found the pie easy to prepare and a refreshing dessert for the summer, just a tad bit boring though...

Tuna Salad with Cranberries
