Louisiana Shrimp Creole II

I really enjoyed this dish. I didnt add the butter because i tried to make a healthier version without it. It still came out great. I also added a few more spiced to pump up the heat. It goes perfect served over steamed rice and corn on the cob for a complete meal.

Heather's Cilantro, Black Bean, and Corn Salsa

This was really yummy. Instead of the oil I added a little lime juice. I also used regular diced tomatoes because the Italian style was too much like a sauce.

Spinach, Red Lentil, and Bean Curry

This was a really good and healthy recipe. I didnt add the oil but it came out fine. I also added some corn into the mix that gave a nice sweetness in the background.
