Apple Pumpkin Muffins

Reviewed: Jan. 6, 2009
Awww.. These were soooo good! I wish my kids liked them. My only advice is to shred up the apple if you have picky eaters b/c my one son liked it till he saw an apple piece and than didn't touch them. My husband said they tasted good but he also didn't cake for the apple chunks so I'm not giving up on this recipe b/c I really REALLY enjoyed them, I'm just going to grate the apple next time. And the crumb topping was to die for! It went perfect w/ these muffins! I followed the recipe exactly and it was great! THANKS!!!

Ham Salad Spread

Reviewed: Dec. 27, 2008
This was awesome! We had an 8 lb ham for Christmas and ham sandwiches were getting old LOL! We stuck to the ingredients in the recipe, but we doubled everything from the mayonnaise to the celery and egg! We kept it to 3 cups of ham and we chopped it up in several batches in the food processor. It's the egg that truly makes it and I was surprised it didn't need any salt or pepper to taste! What a great way to stretch your ham in these tough economic times! Thanks for the recipe Marcella, this is a keeper!

My Best Clam Chowder

Reviewed: Dec. 21, 2008
Wow! this is "My Best Clam Chowder!" I took a hint from the other reviews, although I kind of winged it from the beginning. I had a pound of frozen clams in the shell and steamed them in 1/4 tablespoon of butter and 1 teaspoon of minced garlic. After making sure they were coated,I added 1/4 cup of white wine, covered and steamed for 4 minutes till they opened. I drained the juice and added the juice from one 10.5 ounce can of minced clams. Thinking I didn't have enough clam broth, I added 1 1/2 cup of chicken broth to both the drained clam juice and buttery/garlic wine clam juice. I then fried 3 strips of bacon, removed from pan then added the veggies with the clam broth. Yes, I sauteed the veggies in the bacon grease, fattening but soooo tasty! (then added the clam broth as instructed) After whisking the butter, flour and cream mixture, I added all the veggies and clam broth. I crumbled the bacon and added both the minced and steamed clams, salt and pepper to taste then the red wine vinegar. This was in one word, FANTASTIC! It wasn't that hard nor expensive, this is a definite keeper!! Thanks!

Cinnamon Pie

Reviewed: Nov. 27, 2008
This was good ... not the greatest pie in the world, but it gets kudos for simplicity and for the gact that this is a good pie to throw together at the last minute to make something special. I love cinnamon, and this is a great way to feature it.

Bacon, Egg, and Cheese Strata

This was fine, but nothing to write home about. I'm with Babskitchen - needs something to kick it up a bit. It was fine ... but bland. Add SOMETHING.

Never made pork into tetrazzini before ... huge hit for these leftovers! Family enjoyed, even husband, who says he is "not big on casseroles."

Corn Chowder

Reviewed: Nov. 16, 2008
With a couple of small changes this was great tasting chowda! I only added 3 cups of water for a little thicker consistency. I added 1/2 stick of real butter (I think this is a must) and 4 or 5 shakes of crushed red pepper to give it a tiny bit of zing. Awesome!

This is pretty good. I tried toasting the pecans per a previous review, and I added some coconut and cherries.

I made this because I wanted to eat the dough, and it was just right. Tomorrow I will bake them. :) Ok, it is tomorrow and some have been baked. They are fabulous!! I baked them at 350 for about 12 min. They were perfect, the edges a little crispy and the inside nice and soft... MMM I am bringing some to my guy at work right now!!

Scott Hibb's Amazing Whisky Grilled Baby Back Ribs

Reviewed: Jan. 6, 2009
THESE WERE AMAZING!!!! I goofed up... I didn't have any whisky so I just omitted that and I found out at the last second that my sister stole my can of tomato paste so I used ketchup instead and since the ketchup was not as thick as the paste would of been I used alittle less water than the recipe called for. I also used a real onion and one garlic clove since I had it on hand. Other than that everything else I did exactly to the recipe. I also cooked the sauce alittle longer since it started out watery but I'm telling you it turned out PERFECT! These were SOOOOO good! And I was surprised at how easy these were to make... the prep was not that hard or that long, than I just let everything cook for a few hours while I cleaned. I gave it all to hubby when it was time to grill and he basickly just grilled them for 10 mins (make sure you save som,e of the sause and put it on as you take the ribs off the grill so theya re super sticky and dripping w/ sauce! This was the first time I've ever made ribs and they were so good that my nephews (who live upstairs and already ate dinner) came down from the scent and ate up all the leftovers. My son demanded that I make this at least once a month. I'm DEFINATLY making these again! ****UPDATE**** I make this every few weeks now. I tried it exactly how it's written and it's also incredible that way but I don't normally have whisky on hand and I always have tons of ketchup so I basicly stick to the way I made it the first time. These are to

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Oct. 30, 2008
I absolutely loved these cookies and ate 4 of them before mailing them to my grandfather. I didn't have any butter flavored shortening, so I just used regular. I used dark brown sugar instead of light. I added a tsp. of pumpkin pie spice and also 1/2 cup chopped walnuts. Yummy!!!
