Miami, Florida, has the second largest Cuban population of any city in the world, behind only Havana. It’s not surprising, then, that meals in Miami should have a Cuban accent. In fact, South Florida and Cuba share a common history: both lands were at one time claimed by Spain. Their close geographic proximity, the rush of Cuban immigrants into South Florida, and the wealth of foods indigenous to both places have eased the adaptation and evolution of Cuban cuisine in and around Miami. In South Beach, where clothing is optional (or often so minimal as to seem that way), the hip and happening are seeing and being seen, basking in both the Miami sunshine and the glow of their own fabulousness amidst trendy bars and spendy restaurants in a beautiful setting dominated by soft pastel Art Deco architecture -- much of the district is listed on the National Register of Historic Places.

I grew up on fast food and never learned to cook. At the age of 28, while in law school, I moved in with a great roommate who was an avid cook. All of a sudden I had spices, recipe books, kitchen tools, and gadgets at my disposal. The food world was mine for the taking and I grabbed on for dear life! Perfect Turkey

This really was good. I was nervous about doing this without having had a practice run, but my fears were unfounded. I brined my 23.5 lb turkey using 2 cups of kosher salt for the 12 hours as stated in recipe the day before. Then took it out of the brine and stored it overnight in the fridge to let any salty water drain from the bird as suggested by some other reviewers. My bird had no water drain out at all. I also stuffed my bird because that's the tradition with our family. I was worried that it would be too salty, but it wasn't and I even put sausage in my stuffing. Truly, the brining process makes the turkey very moist and tasty. I will always do this from now on each thanksgiving!

Cranberry Sauce I

I do not like cranberries, but decided to treat those who do by making them fresh instead of buying the canned ones. Well, this cranberry sauce was a hit! I even ate it with my turkey because it was so good! The only thing I have to say is that it takes a little while for the cranberries to pop, so don't worry that you are doing something wrong when you are stirring and stirring and nothing seems to be happening - it will. I did also add more sugar, but that was because I thought the sauce seemed thin while I was cooking it. This sauce is even better the next day. I will use this recipe each year from now on as everyone loved it!

After-Christmas Turkey Potpie

Really yummy! I had to use cream of chicken soup, because that is what I had on hand. But otherwise I made this exactly as directed and it was WONDERFUL. My one year old was crazy about it, too!
