I am married and the mother of two boys, 5 and 8 yrs old. I work full-time outside the home, and between juggling work and home duties, I am completing a masters degree program with graduation July 2006. I love cooking, but have less time to devote to this hobby than I'd like. I struggle to find new menu items my boys will eat, but my husband regularly puts up with having "guinea pig" for dinner - meaning a new and untested recipe. I love cookbooks and collect any I can get my hands on, resulting in my have 100s of recipes I want to try someday.

Good Old Fashioned Pancakes

After looking for my sifter for 30 minutes and coming up unsuccessful, I decided to give this recipe a try without my sifter. This recipe was ubber fluffy even without sifting. I followed the directions to a tee, and my 4 year old pancake monster said these pancakes were the best. Next time, I will add 1 tsp to 1 tbsp vanilla and see how that works. Thanks for the wonderful pancake recipe.

B and L's Strawberry Smoothie

I have been making this smoothie for the past 6 years, and it is always my go to strawberry smoothie recipe. I cut the sugar to 1 tbsp, and vanilla to 1 tsp. Sometimes I use frozen strawberries (that I freeze after cutting during the summer reasons) and sit them in hot water for a few minutes. If the mix is too think with the frozen strawberries (I don't use the ice when I use the strawberries frozen) I simply add a little water at a time until the consistency that I desire. Delicious recipe.

Easy Meatloaf

I used this recipe for my first meatloaf and it came out quite good. The topping is what caught my eye. It was quite good and fast, but as I have cooked more and more, I do the meat differently now (add lipton onion soup mix, worcestershire sauce, green and/or red peppers, seasonings of choice) but I still come back for this topping. I double or triple the topping, reserving some to use in the last few minutes on broil to get it to "stick" to the loaf.
