Charlotte, North Carolina

The largest city in North Carolina and the largest between Washington, DC, and Atlanta, Charlotte is a major banking and investment center with all the amenities of a big city but a down home feel in its historic areas and leafy residential neighborhoods. So it's no surprise that you can find any type of cuisine in Charlotte's restaurants including Indonesian chicken and shrimp, fish tacos, grilled tuna steak, creme brulee, and much more. But you needn't look far to find regional classics such as fabulous fried chicken, hush puppies, Brunswick stew, whole pig pit-cooked barbecue seasoned with vinegar-hot pepper sauce. Then cool down with a local cherry soda or sweet tea.

Pumpkin Pie Squares

I am not a huge pumpkin pie fan...but my husband is..and he loves these!! They are really easy to make, and even "special" enough for company. I use an 8 x 8 pan so the bars turn out thicker.....you have to bake them longer....just take them out when the filling is set.

Roasted Vegetables

I make this several times a year and it always turns out delicious. The key is the fresh herbs...don't substitute dried!! Also, cut the peppers into thick strips, don't chop or dice. You must stir it every 10 minutes so it doesn't burn!! It's worth the work!!

Pasta Salad with Homemade Dressing

This salad is a lot of work...but it is well worth it. I have taken this to many parties/BBQ's and always get compliments on it!! I use turkey pepperoni and mozzerella cheese to cut down on the fat and caloires. This salad is a meal in and of itself!
