About me:
I don't know when I really started cooking. I guess I could tell you stories of helping mom in the kitchen making breads, etc., but it all came to fruition about 10 year ago when I married a non-cooker. The relationship didn't last but the love for cooking did. Since then my cooking has escalated to where I now throw dinner parties for my friends at least once a month. Two of my best friends are also great cooks and we've taken gourmet classes together, visited some of the great cooking regions of the world together (Italy, France, etc) and now try to out-cook each other on a regular basis. My one friend may have a lock on appetizers with his pheasant pate, but my chocolate souffle, creme brulle, and pastry concotions always keeps him on his toes. If you can't tell by the pictures here, when we cook we at least try to dress the part :)

Downeast Maine Pumpkin Bread

YUM! I just burnt the tastebuds off my tongue b/c I couldn't wait to eat it. At least, the first bite was a 5 star. Doubled the spices. Made 5 mini-loaves and 6 muffins. Baked both at 350--the loaves for 37 min. and the muffins for 20 min. Also subbed half the oil with applesauce (none the wiser), and scaled down the sugar to 2 1/3 c. (half white, half brown). Made these for a fundraiser.

Gingerbread Cupcakes with Cream Cheese Frosting

This cupcake recipe is phenomenal! It baked at 350 for exactly 20 min. and they turned out beautifully. I will be using them at a fundraiser. They were perfectly rounded. I did not use this frosting, but instead used "Decorator Frosting" from this website as another had suggested. I would absolutely suggest that frosting if you are interested in piping on this cupcake. The taste greatly complements this spicy cupcake.
