Beef and Bean Chimichangas

I'm a Mexican food freak, but this just wasn't good...in my humble opinion. My tortillas were touch and hard to cut, instead of crispy, like I had wanted. Next time, think I'll just stick with enchiladas or soft tacos!

Pumpkin Pecan Cheesecake

Being in a hurry, I accidentally put the streusal on prior to baking. After deciding to just roll with it, I was happily surprised. It was really good! The topping sank in and tasted like it belonged. LOL. Very good. Like other reviewers, I must agree that this is less like a cheesecake and more like a different-tasting pumpkin pie. Note that most pumpkin cheesecakes call for two bricks of cream cheese, this is only one. Still delicious!

Sweet Dinner Rolls

These are awesome! I have never been able to make good rolls until now, before I could never get them to rise properly or they would be too dense. But I used the bread machine as the recipe states and they were perfect. The only thing I did different was I did not make them into the buttered crescents, I made 24 dinner rolls. I am so excited to have found a successful roll recipe. I will definitely make these again!!!

Cha Cha's White Chicken Chili

Not bad! Added garlic salt, doubled the oregano. I think hominy or corn would be a good addition. Will make again. Super easy & quick.

Spaghetti With Peanut Butter Sauce

I used lo mein because I didn't have spaghetti. Likewise, I also used heavy whipped cream out of a spray can, reduced fat peanut butter, and regular soy sauce. Even with all the forced changes, it was still really good. It definitely needed some crushed peanuts, though. Thanks for the easy (and forgiving) recipe!

Shrimp and Catfish Gumbo

Great! It's a real comfort food. We added sausage and substituted cod for catfish. We loaded it with the seafood and meat. Served over rice, there is plenty left over to freeze.

Wonderful Banana Cake

This cake wasn't very good straight out of the oven (it felt wet), but it was really great after it sat in the refridgerator overnight. I frosted it with chocolate frosting and I preheated the oven.

Pumpkin Cream Cheese Muffins

These were good! Time consuming, but I heard nothing but great things from all who had one. Added some nutmeg, ginger and cloves. Very good and they were beautiful when I took them out of the oven.
