Southern USA

Southern cuisine means big, big flavor. Many culinary classics of the American South are known to all: fried chicken, barbecue, biscuits, and sweet potato pie. Some regional favorites are a little more obscure, like smoked country ham and redeye gravy, crayfish etouffee, and Brunswick stew. And then there are local loves that rarely get any play beyond the places where they were born, like Country Captain, Hoppin’ John, and the Louisville Hot Brown. The South’s heat and humidity lead Southerners to excel in the art of canning and preserving. Pickled fruits and vegetables, relishes, and chutneys are indispensable; even barbecue sauce comes down by way of a long line of homemade vinegars. The weather, coupled with a love of hospitality and for gatherings centered around eating, leads to many outdoor food events. The church picnic, oyster roast, the afternoon barbecue, they all bring folks together to socialize over a common and comfortable cuisine.

Chile Garlic BBQ Salmon

Reviewed on Aug. 27, 2008 by matgurl
because i was without, i used no lime, no green onion, no fresh ginger. i did use 1 heaping tspn powdered ginger. and a heaping tbspn of sambal chile sauce due to my preference for POW! flavor. i also added a dollop of olive oil and water then marinaded the salmon for about 90 mins. yummy, incredible, delish, moist flavor. hubs said it was superb. will definitely make again.

Apple and Onion Beef Pot Roast

Reviewed on Aug. 27, 2008 by Mary KAT
Hubby and I liked this change for us- APPLES with ONION -- with beef roast. Since we live in the South - we used a BIG VALDALIA onion & 2 Grannie Smith Apples. Used a well trimed chuck roast--Strained out apple and onion-->>> pureed in blender.--deglased remainder of liquids and added back to apple mixture. Heated through to bubble-- Serve on sliced beef or on side

Sesame Seared Tuna

Reviewed on Aug. 27, 2008 by matgurl
so i used it as a marinade and dipping sauce. i used only 1T of sesame oil as i know it can be a wee bit overpowering. also, i used splenda brown sugar and no wasabi. oh, and i didn't have mirin so i used a white meritage. and i sprinkled with sesame seeds after cooking. the flavor was super yummy but lacking the oomph that the wasabi would provide. i'll definitely prepare again with ingredients as outlined b/c i know the flavors will work perfectly.
