Mom's Zucchini Bread

YUMMY!! I made a few changes to lighten this up since everyone I know is on a diet these days: I used all whole wheat flour; instead of 3 eggs, I used 1 egg white and 1/2 c. egg substitute; instead of 1 c. oil, I used 1/2 c. nonfat plain yogurt and 1/2 c. peanut oil. None of us missed any of the calories or fat.. this is delicious!

Restaurant-Style Coleslaw I

Really good. To lighten it up, I used mostly nonfat yogurt instead of the mayo, then added the vinegar to taste since yogurt's pretty tangy. I swear, you won't miss the mayo!

Sarge's EZ Pulled Pork BBQ

So good. No need to brown the pork prior to slow-cooking it. I cooked the pork on low for about 8 hours, shredded it and put it back in the pot with BBQ sauce for a couple hours. Melts in your mouth!
