About me:
I have been happily married now for almost 2 years. We have a son, Liam who will be one in August. My husband and I both enjoy cooking and it is something we hope to get our son excited about, too. I found out I had celiac disease in 2003 (a week before my 20th birthday! lame!) which means I can not have any gluten (wheat, bran, oats, barley, ect.) I am also lactose intolerant, and allergic to a lot of preservatives. I never feel restricted though, we both have gotten pretty clever about changing recipes to fit my diet.

Sweet Potato Pie I

Having never eaten sweet potato pie and knowing my husband hates it, I wasn't sure what to expect... Especially when the sweet potatoes were all stringy when mixed with the other ingredients. But I pressed on! I used about 3/4 of a 29-oz can of sweet potatoes in place of fresh, and I followed the rest of the recipe exactly... Until my hand mixer died mid-recipe. Not wanting to dirty another bowl, I didn't use the stand mixer and instead used a whisk to make sure everything was well-blended. And this was awesome! I think I might like it as much as (or may more than) pumpkin pie. So good, but no one else would touch it (my daughter remembered the stringiness of the uncooked filling!). Oh, well, more for me. Thanks for sharing, Cougaar!

After-Thanksgiving Turkey Soup

This was so good. It did make a lot of soup, so it took about six days for the three of us to finish the pot, but it was good. I added lots of extra kosher salt (it needed it), I only used around 2 TBS butter, I omitted the flour and used potato flakes to thicken it up, and I used around 2 cups of uncooked bow ties in place of rice. It was so yummy, especially with a spoonful of sour cream mixed in! Thanks for sharing, Valorie!
