Crunchy Turkey Salad

This was a GREAT recipe for my leftover thanksgiving turkey! For the most part I stuck to the recipe, but I did change the quantities. I added more turkey & walnuts and less apple & celery. It definitly needed more turkey than 1 cup. My own twist was to add about 1/4 cup dried cranberries and that gave it a nice zing. I liked this sandwich a lot, but it could be served as a salad a well.

Jalapeno Hummus

I thought it was just okay. The taste of the curry didn't seem to balance well with the jalapenos, and next time I'll replace the curry with fresh chopped cilantro.

Roasted Sweet Potato Corn Chowder

We enjoyed this, and it didn't take as long as the stated prep time; it was actually fairly easy. I made a few changes: olive oil, yellow onion, no white potato or celery. I think the potato is meant to thicken the broth, because mine was fairly thin, so I simmered it with the lid off, then threw in about 1/4 of the roasted sweet potato and blended it. Great flavor and a definite keeper.

Crustless Cranberry Pie

Very easy and tasted great! My daughter doesn't like nuts, so I substituted them with 2 oz. of cut-up bittersweet chocolate, then cut back on the sugar a little. Be aware that this really tastes like a cake not a pie.

Slow Cooker Spinach Marinara Sauce

Some of the reviews weren't good, so I wasn't expecting much, but this was pretty tasty. I did, though, adjust the recipe based on suggestions. Didn't add salt, added less oregano, then fresh basil at the last hour of cooking. Just a sprinkling of crushed red pepper, but it still had a bite. Used only 1 can of tomato paste--plenty--in fact, next time, I might skip it and just add some tomato sauce. Was quite thick--I ate it on spaghetti, but I think it would work great in a spinach lasagne.

Hungarian Mushroom Soup

Thought this was really good. My husband is Hungarian, and he loved it. My changes: used vegetable broth and just a sprinkling of salt--it seemed salty enough to me. Also, just realized, by accident, I put in less sour cream--but still tasted good. It is a little on the thick side; might want to add extra broth. I think next time I might add the mushrooms in with the onions and cook them all for 10 minutes.

Pecan Pie V

Awesome. I put a layer of pecan halves on the top to cover up the "ugliness" and it came out beautiful. THe top layer added an extra cup of nuts, so next time I might cut the chopped nuts in the pie to 1/2 c.
