I'm a farily young, (or at least I like to think so),mom of five young kiddos. I have lived all over the United States and enjoyed a great variety of cuisine. I love to cook but have a very picky hubby and will sometimes cater to his pickiness by leaving out certain ingredients. Most of the time, however, I try to leave everything in as is written in the recipe so that my kids won't become picky like him. I am also an avid fitness maniac. I teach group fitness and I am also a certified personal trainer. Although I know what I am supposed to eat, I sometimes eat the exact opposite. I work out extra hard when I give in to my sweet tooth!

Cilantro Lime Cod

I thought this was good. I replaced the cod with red snapper. I decided to follow the recipe by adding the lime and cilantro prior to cooking, as directed. I certainly could taste the flavors but held some raw behind in case I needed to sprinkle after cooking. I also realized I was out of fresh garlic so instead I used chopped shallots and garlic powder in the topping. The only thing I would change for next time is to take the rind off the lime before putting it on the fish. It caused kind of a bitter taste but without the rind it would be perfect.

Bacon Cheese Frittata

I love this recipe it is very good I add more cheese and cook the bacon in my mirowave I also use frozen shreded hashbrowns mmmmmm Im making this again this morning my husband likes to make a sandwich out of this this is one you have to try

Awesome Slow Cooker Pot Roast

We are a meat 'n potato family. This is the ONLY way I will cook a roast in the slow cooker. The gravy is amazing! RECIPE IS PERFECT AS IS. (just for calorie saving I use reduced calorie soup...no difference!)
