Sacramento, California

The capital of California is a gold mine of history—literally. Gold was first discovered in 1848, thirty miles east of Sacramento, making the early days rather lively as the town hosted miners who had hit it big. They were a boisterous bunch, spending their loot on gambling and dance halls. Today, Sacramento is still a hub of activity, shipping and processing fruits, vegetables, rice, wheat and dairy goods from Central Valley. It still maintains some of that old west vibe with its vintage buildings on the riverfront—home to over 100 restaurants. Fine restaurants can also be found sprinkling the rest of the city, offering American, Italian, Mexican, French and California cuisine.

Pecan Cilantro Pesto

My friend Matt made this and recommends using another type of nut. He topped chicken with the pesto and baked 1 hr. He reports the pecan tasted too strong for the first few bites, but ended up tasting OK.

Roasted Vegetables

This was really good, but mine was nowhere near done after 40 minutes! Maybe my roasting pan was not big enough, as I used a deep pan and it was fairly full. After the first 40 minutes I added foil and left them in for another 20 minutes without stirring, then took the foil off and left them in another 10 minutes. The vegetables had good flavor but I think I will need some time to perfect this recipe. LUCKILY I was told, at the last minute, that you have to remove the rind from the butternut squash (I had never prepared one before)! :)
