Frosted Cranberries

I have to say I was hesitant about these, and at first bite they were sour, but afer a couple you find myself addicted to them! H even liked these and he doesn't like cranberries.

Spinach Dip with Water Chestnuts

This is my favorite spinach dip, it's the one from the Knorr vegetable soup package, anyway I always use 1 (16oz.) bag of chopped spinach and no green onion. The best!

Yummy Sweet Potato Casserole

Made a double batch of this for Thanksgiving this year and everyone loved it! They wouldn't let me leave without giving up the recipe!! Even people that didn't like sweet potatoes commented on how good it was!! There was nothing left at the end of dinner! MAKE THIS!! (I made it just as the recipe stated with no substitutions)

Cornbread Casserole

This is one of my kids' favorite dishes (5 and 7 yrs old). I was out of cheese once when I made it and it didn't make much difference so I usually omit it. I also frequently use non-fat yogurt instead of sour cream. These two changes remove a lot of the fat. The yogurt adds a little extra tang. I use the Jiffy cornbread mix which adds just enough sweetness. The other mixes leave it a little bland. Try adding diced green chilis. Yum!

Broccoli Chicken Casserole IV

This was pretty good. I used left-over chicken and pork and fresh broccoli so it wasn't too watery, but I can see how it would be. I used mild cheddar cheese as that is all I had and I put stuffing mix on top with some cheese which was good, and a little garlic powder as well. It was easy to make but I find the soups a bit too salty. I served it over left-over rice. This was a good way to use up left-over meat.

Exquisite Pizza Sauce

Too much honey. Use 1 tablespoon or 1/2 tablespoon. Was too sweet, other than that it was mighty tasty.

Best Ever Jalapeno Poppers

My mistake to think that jalapenos from the local Mexican market could be a cheaper substitute for the blander normal market ones. Fortunately the sauce is tasty and leave a hint of spiciness behind.. once I peel the chilie off.

Creamy Rice Pudding

Yummy. Added random stuff on hand like dates and shredded coconut to make it yummy. Specifically only added half the sugar and then drizzled molasses on top. Fabulous!

Best Fried Green Tomatoes

Tomatoes really only need to be about 1/4 inch or less thick.. the thicker they are, the longer they take to cook, the more likely they are to have the corn breading burn. Corn breading very good. I have never had fried green tomatoes before, but my boyfriend from Mississippi has. He loved them, I loved them after I threw some ranch dressing on top. Great chance to use up some end crop of tomatoes before making the green tomato relish (on this website)

Chicken Enchiladas II
