Almond Macaroon Nests

This is a tradition at Easter in our family! A delicate butter cookie, decorated with colored coconut to look like a little nest and filled with chocolate covered almonds or peanuts. I like to color the coconut by placing it into a jar with the food coloring. Just close the lid and shake until colored. No messy hands!

I was pleasantly surprised when my late night sugar munchies concoction tasted fabulous. They're cake-like; barely crisp around the edges and so soft inside that the center will literally melt in your mouth. Mom called them the best cookies she'd ever tried. You should try them.

The first person I served this for didn't like peach cobbler (unknown to me). He really enjoyed it. I just made it because it sounded yummy and I was dieting. No one will ever guess it's 'lighter' than any other cobbler. I hope you like it. Oh! and it's quick and easy.
